Eggless Cornbread
Ingredients
- 1 cup corn meal / flour
- 1 cup wheat flour
- salt to taste
- 1 tsp green chili finely chopped or red chili powder
- 2 tbsp finely chopped cilantro
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2 tsp brown sugar
- 1 cup yellow sweet corn fresh or frozen
- 1&1/4 cup milk
- 1/4 cup plain yogurt
- 3 tbsp olive oil
Method
- Preheat oven to 375 F
- Grease a large glass dish with a few drops of olive oil & keep aside.
- In a large bowl mix together all dry ingredients.
- Add the milk & keep mixing.
- Add yogurt & mix well.
- Then add sweet corn & mix again.
- Finally add olive oil & mix well.
- Pour this mixture into the greased dish.
- Gently flatten with a knife & place in the oven.
- Bake for about 25 to 30 min. until toothpick inserted comes out clean.
- Cut into little squares & serve warm or cool with any soup or green chutney or sauce.
