Ingredients:
- 1 Small bottle gourd / lauki peeled & chopped
- 1 Small onion finely chopped
- 2-3 Green chilies finely chopped
- 5-6 Curry leaves
- 2-3 tbsp Fresh grated coconut
- Chopped cilantro for garnishing
- Salt per taste
- 1 tsp oil
- 1/2 tsp Mustard seeds
- 1/2 tsp Fenugreek seeds
- 1/4 tsp Hing/ Asafoetida
- 1/4 tsp Turmeric powder
Method:
- Heat oil in a pan or kadai. Add mustard seeds & hing.
- As the mustard seeds splutter then add curry leaves, fenugrrek seeds & turmeric powder.
- Then add chopped onion & saute it for 3-4 min . till golden brown.
- Then add chopped bottle gourd & add 1 tbsp water. Cover the pan with lid. Cook for 5-7 min on medium heat.
- As the water evaporates, add fresh grated coconut & cook again for 5 min. on slow heat.
- If needed add little water, till the bottle gourd is cooked.
- Add salt to taste. Then garnish with grated coconut & chopped cilantro.
