Dudhi / Bottle gouard / Lauki Sabji














Ingredients:

  • 1 Small bottle gourd / lauki peeled & chopped
  • 1 Small onion finely chopped
  • 2-3 Green chilies finely chopped
  • 5-6 Curry leaves
  • 2-3 tbsp Fresh grated coconut
  • Chopped cilantro for garnishing
  • Salt per taste
  • 1 tsp oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Fenugreek seeds
  • 1/4 tsp Hing/ Asafoetida
  • 1/4 tsp Turmeric powder



Method:

  • Heat oil in a pan or kadai. Add mustard seeds & hing.
  • As the mustard seeds splutter then add curry leaves, fenugrrek seeds & turmeric powder.
  • Then add chopped onion & saute it for 3-4 min . till golden brown.
  • Then add chopped bottle gourd & add 1 tbsp water. Cover the pan with lid. Cook for 5-7 min on medium heat.
  •  As the water evaporates, add fresh grated coconut & cook again for 5 min. on slow heat.
  • If needed add little water, till the bottle gourd is cooked.
  • Add salt to taste. Then garnish with grated coconut & chopped cilantro.
